- 2 cans black beans, drained and rinsed
- 1 cup quinoa, cooked
- 1/2 cup red bell pepper, finely diced
- 1/2 cup red onion, finely diced

- 1/2 teaspoon smoked paprika
- Salt & pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon lime juice
- 1/4 cup breadcrumbs or almond flour, (for binding)
- Olive oil for cooking
For the Sweet Potato Fries
- 2 large sweet potatoes, washed and cut into wedges
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For Serving
- whole wheat burger buns or lettuce wraps, or multi-grain buns
- 2-3 slices avocado
- 1-2 slices tomato
Optional toppings
- Greek yogurt or sour cream
- salsa, pickled jalapenos

Prepare the Black Bean Burgers

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.

Add the cooked quinoa, diced red bell pepper, diced red onion, minced garlic, ground cumin, chili powder, smoked paprika, salt, pepper, chopped cilantro, lime juice, and breadcrumbs or almond flour to the bowl. Mix until well combined.
